Creativity and tradition from the Tuscan hills
Pasta Bertoli's special shapes, including Straccetti, white Pappardelle, Caserecce, Foglie d'olivo (olive leaves), Farfalle bandiera Italia (Italian flag butterflies), Orecchiette, Trofie, and squid ink Tagliatelle, are made with organic durum wheat semolina grown in Santa Luce, from ancient varieties such as Senatore Cappelli and Saragolla. Bronze-drawn and slowly dried at low temperatures (35°C), they guarantee a rough porosity, excellent cooking resistance, and an authentic flavor that enhances any sauce.
These pastas celebrate the Tuscan territory: the Foglie d'olivo, inspired by the Pisan hills, pair perfectly with spring vegetables like artichokes and fava beans; white Pappardelle and Straccetti are ideal for traditional ragùs; Orecchiette and Trofie for light sauces; while Farfalle bandiera Italia and squid ink Tagliatelle add color and a natural maritime personality.
