The Classic Recipe with a Tuscan Touch: "Estate in Tavola" Trofie
The perfect pairing is with pesto, but we add a touch of character with our aromas.
Ingredients for 5 people:

1 pack of Trofie (500 gr)

1 jar of high-quality Genovese Pesto

2 medium potatoes and 100 gr of fresh green beans

1 teaspoon of our Garlic, Oil, and Chili Pepper Preparation (to flavour the cooking water)

Extra Virgin Olive Oil and toasted pine nuts
Method:

The Vegetables: Cut the potatoes into small cubes and the green beans into small pieces.

The Single Cooking Step: Immerse the potatoes and green beans in boiling salted water. After 5 minutes, add the Trofie to the same pot. This secret allows the pasta to absorb the starch from the vegetables, making it even more binding.

The Quick Sauté: In a small pan, heat a drizzle of EVO oil with a pinch of our Preparation. This will give an aromatic boost to the base of the dish.

The Combination: Drain the pasta and vegetables, transfer them to a bowl (not on the heat!) and add the pesto and flavoured oil. Mix well, adding a spoonful of cooking water to achieve perfect creaminess.
