The Sun's Recipe: Caserecce alla Siciliana (with a Tuscan Touch)
A dish rich in colors and flavors that uses the shape of the pasta to capture every ingredient.
Ingredients for 5 people:

1 packet of Caserecce (500 gr)

2 eggplants, diced

500 gr fresh cherry tomatoes or rustic tomato passata

3 tablespoons of our Puttanesca Penne Preparation (for a savory note of olives and capers)

Salted ricotta or Pecorino shavings

The Gold of Eggplant: Fry the eggplant cubes in EVOO until golden brown. Drain on absorbent paper.

The Express Sauce: In the same pan, add our Puttanesca Preparation with a tablespoon of water to release the aromas. Add the cherry tomatoes and cook over high heat for 10 minutes.
