The Sun's Recipe: Caserecce alla Siciliana (with a Tuscan Touch)

A dish rich in colors and flavors that uses the shape of the pasta to capture every ingredient.

Ingredients for 5 people:

  • 1 packet of Caserecce (500 gr)

  • 2 eggplants, diced

  • 500 gr fresh cherry tomatoes or rustic tomato passata

  • 3 tablespoons of our Puttanesca Penne Preparation (for a savory note of olives and capers)

  • Salted ricotta or Pecorino shavings

  • Extra Virgin Olive Oil

Method:

  1. The Gold of Eggplant: Fry the eggplant cubes in EVOO until golden brown. Drain on absorbent paper.

  2. The Express Sauce: In the same pan, add our Puttanesca Preparation with a tablespoon of water to release the aromas. Add the cherry tomatoes and cook over high heat for 10 minutes.

  3. Cooking: Cook the Caserecce in plenty of salted water. Their shape requires careful cooking to maintain the characteristic "al dente" texture.

  4. The Union: Drain the pasta and sauté it in the sauce. Add the eggplants at the end to keep them crispy and finish with a generous grating of salted ricotta.
