The Rustic Recipe: Straccetti with "Finto" Sauce and Pecorino
The "finto" (fake) sauce is a Tuscan classic: a vegetable sauce so rich and flavorful that you won't miss the meat.
Ingredients for 5 people:

1 packet of Straccetti (500 gr)

500 gr rustic tomato passata

3 tablespoons of our Pici all’Aglione Preparation

A finely chopped mixture of celery, carrot, and onion

Extra Virgin Olive Oil and plenty of grated Pecorino Toscano cheese
Method:

The Sauté: In a saucepan, sauté the chopped vegetables with plenty of EVOO. Add our Aglione Preparation: its sweet and aromatic note will give the sauce incredible depth.

Cooking the Sauce: Pour in the tomato and let it cook over low heat for at least 20 minutes, until it becomes thick and velvety.

The Pasta: Cook the Straccetti in plenty of salted water. Drain them al dente, leaving a few drops of cooking water clinging to the pasta.

Finishing: Toss the straccetti in the sauce, turn off the heat, and add a generous sprinkle of Pecorino Toscano. Mix well until a delicious cream forms.
