🐚 The Special Recipe: Baked Stuffed Organic Calamari (Surf and Turf)
This preparation enhances the unique shape of the format, treating it almost like a "sea cannellone."
Ingredients for 5 people:

1 pack of Tuscan Organic Calamari (500 gr)

400 gr fresh ricotta or goat cheese
-
150 gr minced shrimp or smoked salmon

Organic lemon zest and fresh thyme
-
1 sachet of our Garlic, Oil, and Chili Pepper Preparation (to season the base)

200 ml light béchamel or mirror tomato sauce
Method:

Pre-cooking: Cook the Organic Calamari in salted water for about half the time indicated on the package. Drain and let them cool on a clean cloth, well separated.

The Filling: In a bowl, mix the ricotta with the minced fish, lemon zest, and a pinch of salt.

Stuffing: Using a piping bag or a teaspoon, fill each pasta ring with the ricotta cream.

In the Oven: Arrange the calamari vertically in an oven dish where you have spread a thin layer of béchamel (or tomato) seasoned with our Garlic and Oil Preparation.

Gratin: Sprinkle with breadcrumbs and a drizzle of EVO oil. Bake at 180°C for 10-15 minutes until golden brown.
