Free from chemical additives, this preparation recreates the traditional Tuscan sauce quickly and easily. Sauté in a pan with extra virgin olive oil and toss the pasta for a creamy and flavorful result. 80 g package, ideal for perfect portions and guaranteed freshness. Who says Cacio e Pepe only goes with pici? Our Tuscan Organic Maccheroni, with their welcoming shape and bronze die extrusion, are perfect for capturing the delicious cream of our preparation, delivering a full and satisfying bite. A rustic, organic recipe ready in minutes.

Ingredients for 4-5 people:

  • 1 packet of Tuscan Organic Maccheroni (500g)

  • 4 tablespoons of Pici Cacio e Pepe Preparation

  • Extra Virgin Olive Oil (or a knob of butter for extra creaminess)

  • A little pasta cooking water (essential!)

  • Optional: Freshly grated Tuscan Pecorino to enhance the dish.

Method:

  1. Cooking the Pasta: Immerse the Organic Maccheroni in boiling salted water. As it is artisanal pasta, check the cooking to drain it perfectly al dente.

  2. The Aromatic Base: While the pasta cooks, put our Cacio e Pepe Preparation in a large pan with a couple of tablespoons of EVO Oil. Turn the heat very low just to slightly warm the pepper and spices, allowing the essential oils to release.

  3. The Secret of the Cream: Add a generous ladleful of pasta cooking water (rich in starch) to the pan with the preparation. Stir until a fragrant emulsion is created.

  4. The Union: Drain the maccheroni and pour them into the pan. Sauté over high heat, adding, if necessary, another drop of cooking water. The porous surface of the organic maccheroni will literally "hook" the cheese and pepper cream, creating a velvety result.

The finishing touch: Serve with an extra sprinkle of freshly ground black pepper for those who love strong flavors.
