Organic Fusilli alla Puttanesca: The Spiral of Mediterranean Flavour

Puttanesca is a sauce with character: savoury, lively, and rich in aromas. We have chosen our Organic Tuscan Fusilli, produced with selected grains and bronze-drawn, because their enveloping shape is specifically designed to "trap" the condiment and provide you with a complete gastronomic experience.

Ingredients for 5 people:

• 1 packet of Organic Tuscan Fusilli (500 gr)

• 3-4 tablespoons of Puttanesca Pasta Mix

• 400 gr of chopped tomatoes or cherry tomatoes

• Extra Virgin Olive Oil

• An extra touch: A sprig of fresh chopped parsley.

Method:

1. Awakening the Aromas: In a large pan, heat a generous amount of Extra Virgin Olive Oil. Add the Puttanesca Mix and a tablespoon of hot water: let the mixture rehydrate over very low heat for 2 minutes so that the olives, capers, and herbs release all their fragrance.

2. The Sauce: Pour the chopped tomatoes into the pan. Cover and simmer over low heat for about 12-15 minutes, until the sauce is thick and flavourful.

3. The Organic Pasta: Plunge the Organic Fusilli into plenty of salted water. Thanks to the slow drying process, they will maintain an elastic texture and incredible porosity.

4. The Final Embrace: Drain the fusilli al dente and pour them directly into the sauce. Sauté over high heat for one minute: you will see how the pasta's spiral perfectly traps every piece of condiment.
