Processed with bronze dies and slowly dried at low temperatures, these tagliolini offer a soft yet firm texture, perfect for holding rich and traditional sauces like ragù, wild boar, or mushroom. Egg Tagliolini with Truffle and Butter Cream
This recipe enhances the nobility of the egg, creating a creamy and unforgettable dish.
Ingredients for 4 people:

1 pack of Tuscan Egg Tagliolini (250 gr - high yield)

50 gr of mountain pasture butter

1 teaspoon of our Garlic, Oil, and Chili Pepper Pasta Preparation (optional, for an aromatic boost)

Fresh truffle (black or white) or quality truffle cream

Parmigiano Reggiano 24 months
Method:

The Base: In a large pan, melt the butter over very low heat. Add a pinch of our Preparation to add a note of depth, being careful not to fry: the butter should only coat the pasta.

Quick Cooking: Plunge the tagliolini into abundant salted water. Be careful: artisanal egg pasta cooks in just a few minutes!

The Emulsion: Drain the tagliolini, reserving some of the cooking water. Pour them into the pan with the butter and a ladleful of water, tossing vigorously to create a velvety cream that coats each strand of pasta.

The Final Touch: Turn off the heat, add a handful of Parmesan and plate in a nest shape. Finish with a generous grating of fresh truffle.
