Tuscan organic artisan rigatoni, made with 100% organic durum wheat semolina grown directly on our farm, La Ghiraia. Processed with bronze dies and slowly dried at a low temperature, they guarantee pasta with a rough texture ideal for enhancing any sauce. Free from pesticides and chemical fertilizers, packaged with eco-sustainable packaging that respects the environment. An authentic, sustainable choice with the unique flavor of Tuscan tradition. 500 gr package.

The Recipe: Excellent Organic Rigatoni alla Norma

Ingredients for 5 servings:

  • 1 pack of Tuscan Organic Rigatoni (500 gr)

  • 2 medium eggplants (silk or black type)

  • 500 gr tomato puree or peeled tomatoes

  • 1 clove of garlic (or one teaspoon of our Garlic and Chili Preparation)

  • Aged salted ricotta for grating

  • Extra Virgin Olive Oil and fresh basil leaves

Method:

  1. The Eggplants: Cut the eggplants into cubes or thin slices. Fry them in plenty of EVO oil until golden and crispy. Let them drain on paper towels.

  2. The Sauce: In a large pan, sauté the garlic with a drizzle of oil. Add the tomato and simmer for about 15 minutes. Season with salt and add plenty of basil.

  3. The Pasta: Cook the Organic Rigatoni in salted water. Thanks to the bronze die, the rigatoni will "capture" the sauce both inside and out.

  4. Combining: Drain the pasta al dente and pour it into the pan with the tomato sauce. Add the fried eggplants and sauté everything for a minute to combine the flavors.

The Finishing Touch: Plate and top with a generous sprinkle of freshly grated salted ricotta.
