Tuscan Organic Maccheroni: The Soft Heart of Cacio e Pepe
Who said Cacio e Pepe only goes with pici? Our Tuscan Organic Maccheroni, with their welcoming shape and bronze die, are perfect for capturing the delicious cream of our preparation, providing a full and satisfying bite. A rustic, organic recipe ready in minutes.
Ingredients for 4-5 people:

1 pack of Tuscan Organic Maccheroni (500 gr)

4 tablespoons of Pici Cacio e Pepe Mix

Extra Virgin Olive Oil (or a knob of butter for extra creaminess)

A little pasta cooking water (essential!)

Optional: Freshly grated Pecorino Toscano to enhance the dish.
Method:

Cooking the Pasta: Immerse the Organic Maccheroni in boiling salted water. As it is artisanal pasta, check the cooking time to drain it perfectly al dente.

The Aromatic Base: While the pasta is cooking, put our Cacio e Pepe Mix with a couple of tablespoons of EVO oil in a large pan. Turn the heat to very low, just to slightly warm the pepper and spices, allowing the essential oils to be released.

The Secret of the Cream: Add a generous ladleful of pasta cooking water (rich in starch) to the pan with the mix. Stir until a fragrant emulsion is created.

Combining: Drain the maccheroni and pour them into the pan. Sauté over high heat, adding a splash more cooking water if necessary. The porous surface of the organic maccheroni will literally "hook" the cheese and pepper cream, creating a velvety result.
The finishing touch: Serve with an extra sprinkle of freshly ground black pepper for those who love strong flavours.
