Dried and dehydrated at low temperatures to maintain freshness and flavor. The Recipe: "Orto d'Autore" Fischietti with Pea Cream and Crispy Guanciale

A dish that plays with textures, where the fischietti become the star thanks to their natural colors.

Ingredients for 5 people:

• 1 package of Six-Flavor Fischietti (500 gr)

• 300 gr of peas (fresh or frozen)

• 150 gr of Tuscan guanciale cut into strips

• 1 teaspoon of our Garlic, Oil, and Chili Pepper Pasta Preparation

• Grated Tuscan Pecorino cheese to taste

• Fresh mint

Method:

1. The Cream: Boil the peas in a little salted water, then blend them with a drizzle of EVO oil and a few mint leaves until you get a smooth cream. Keep it warm at the bottom of a pan.

2. The Crispy Element: In a separate small pan, brown the guanciale without adding fat until it becomes crispy. Drain it and set aside, leaving the cooking fat in the pan.

3. The Flavor Touch: In the guanciale fat, add a pinch of our Preparation to infuse a strong aromatic note.

4. The Cooking: Cook the Fischietti in plenty of salted water. Thanks to the artisanal process, the pasta will maintain its tubular shape and its colors will remain vibrant.

5. The Combination: Drain the pasta and quickly toss it in the pan with the guanciale fat, then pour it into the pea cream.

6. The Finale: Garnish with crispy guanciale strips and a sprinkle of Tuscan Pecorino cheese.
